Maybe because I can tweak it with what's on hand (and haven't broken it yet). Or maybe because it's the one my mom's been making since I was a baby, so it just tastes like home.

What happens to classic banana bread when you swap in sweet rice flour? The result is neither wholly mochi nor traditional banana bread—it’s a lovely in-between, decidedly familiar with a fun textural twist. Baked in an 8x8-inch pan, this bread gets its pleasant springy texture from the sweet rice flour (a common brand is Mochiko, available at Japanese markets and online), while retaining some cakey qualities via the all-purpose flour. This pancake recipe| New Window similarly uses a combination of the two flours, to get the best of both worlds. Melted butter, sour cream, and brown sugar provide the tenderness and richness you’d expect from banana bread, in the form of plush, snackable squares.

I inevitably end up with some grotesquely overripe bananas hanging around, and I always think I should do something with them only to realize a week later that they are beyond salvaging. This recipe – as most recipes for banana bread go – works perfectly with this overripe fruit, and I’d imagine that the moistness of the cake and its intense flavour are attributed to that too. So in other words, it’s perfect for when you have those forgotten bananas past their prime, languishing in your fruit bowl.

What makes these vegan cookies even more apeeling is that they require no baking time, limiting the flop factor which can intimidate so many novice bakers. They are not only high in fibre and without refined white sugar, but they also include the beneficial qualities of coconut oil and the (very on-trend) chia seeds. Smashed out in ten minutes and placed in the fridge until set, you can chill out at the same time, knowing they will turn out fab! No bake, no problem!

Super Moist Healthy Banana Muffins

I was looking to create a moist, healthy muffin and have adapted my original recipe that used white whole wheat flour. Coconut flour has 3 times the amount of fiber than whole wheat flour and you need to use less of it in recipes because of its super absorbency. But you have to add more moisture when using it, so eggs (or egg whites, I use both) do the job. These are delicious for breakfast with coffee or as an afternoon snack!

The spinach part, I have invented myself, so I guess that is the real recipe here. My intention – to inspire to make it simple – because simple makes it so easy to incorporate to other dishes! I eat the spinach part of this dish about 4 times a week, I sometimes swap the pancakes for a simple fried egg (1 beaten egg on a hot pan with coconut oil – nothing else!), or have it for lunch with smoked salmon and homemade hummus.

Vegan Banana Almond Muffins

I started with Banana Halwa(will follow soon), with my imagination hat on I quickly stirred in some batter (in a small batch) for my own Banana Almond Muffins. I did not have a clue how it would turn out. Guess what, this was the best, healthy, vegan style muffins with simple ingredients.
