Air Fryer Roasted Peach Salsa
"Roasting" the peaches brings out their natural sugars, while the jalapeño's mild heat balances the flavors to create a sweet and spicy salsa. Serve this healthy salsa with tortilla chips for an easy appetizer, or use it as a topping for meat and fish.
Ingredients:
- 1 red bell pepper
- ½ - 1 jalapeño or serrano pepper, halved
- 4 ripe peaches, pitted and halved
- 2 teaspoons extra-virgin olive oil
- ¼ cup fresh basil
- 1 scallion, dark green part only, thinly sliced
- 2 tablespoons lime juice
- ¼ teaspoon salt
Directions:
- Preheat air fryer to 380°F. Remove and discard stems from bell pepper and jalapeño (or serrano). If desired, remove and discard seeds. Coarsely chop the bell pepper. Transfer the peppers to a large bowl. Add peaches. Drizzle with oil and toss to coat.
- Working in batches as necessary, place the peaches and peppers in an even layer in the air-fryer basket and cook until lightly browned; 10 to 12 minutes. Transfer the peaches and peppers to a wire rack to cool, about 15 minutes.
- Chop 4 peach halves into 1/2-inch pieces and set aside. Transfer the remaining peach halves and peppers to a food processor or blender. Add basil, scallion, lime juice to taste and salt. Pulse until finely chopped. Stir the chopped peaches into the salsa.
