Air-Fryer Zucchini Fritters
These air-fryer zucchini fritters have a crispy outer surface and tender-savory middle, just as if they'd been fried in a skillet. A simple dollop of sour cream and a sprinkle of refreshing mint is all you need to complete the dish.
Ingredients:
- cooking spray
- 2 medium zucchini
- 1 large egg, lightly beaten
- ½ cup grated parmesan cheese
- ⅓ cup whole-wheat flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ¼ teaspoon ground pepper
- ½ cup sour cream
- 2 tablespoons chopped fresh mint
Directions:
- Preheat air fryer to 375°F for 10 minutes. Generously coat the fryer basket with cooking spray.
- Grate zucchini on the large holes of a box grater over a clean kitchen towel. Gather the grated zucchini in the towel and squeeze over the sink to remove as much liquid as possible. Transfer the zucchini to a medium bowl. Add egg, Parmesan, flour, garlic powder, onion powder and pepper; stir until combined. Shape the mixture into 8 patties (about 3 inches wide).
- Working in batches if necessary, coat the tops of the patties with cooking spray. Arrange them in a single layer in the fryer basket. Cook for 7 minutes; flip the patties and continue to cook until crisp and well browned, about 7 minutes more. Serve with sour cream and mint.
