Banana Bread

BLT Breakfast Sandwich

This open-face sandwich is a delicious way to start your day. Turkey bacon provides savory flavor and crunch while keeping fat and calories in check. Country-style whole-wheat bread (or sourdough) often has no added sugars, making it the best choice here.

Ingredients:

  • 2 teaspoons mayonnaise
  • 1 sun-dried tomato, finely chopped
  • 1 slice country-style whole-wheat bread, toasted
  • 3 leaves green leaf lettuce
  • 2 large slices ripe tomato
  • 1 slice cooked turkey bacon, cut in half
  • ⅛ teaspoon ground pepper

Directions:

  1. Combine 2 teaspoons mayonnaise and the chopped sun-dried tomato in a small bowl. Spread on 1 side of toast slice; top with 3 lettuce leaves, 2 tomato slices and the bacon pieces. Sprinkle with ⅛ teaspoon pepper.
