Chicken Nugget Salad
You'll need a fork to eat these chicken nuggets! In this easy, 15-minute lunch recipe, chicken nuggets, cherry tomatoes and whole-grain croutons are served on a healthy romaine salad with a honey mustard dressing.
Ingredients:
- 3 ounces frozen lightly breaded chicken chunks, such as perdue® simply smart® brand
- 2 cups packaged chopped romaine lettuce
- 1 tablespoon white balsamic vinegar
- 1 teaspoon olive oil
- 1 teaspoon honey mustard
- 1 teaspoon honey
- ⅛ teaspoon black pepper
- 6 cherry tomatoes, halved (3 ounces)
- ¼ cup whole-grain large croutons, coarsely crushed
Directions:
- Microwave chicken chunks according to package directions.
- Meanwhile, place romaine in a medium bowl. For dressing, in a small bowl whisk together vinegar, oil, honey mustard, honey and pepper. Drizzle dressing over romaine and toss to coat. Spoon romaine mixture onto a large dinner plate.
- Top salad with cherry tomatoes, hot cooked chicken and croutons.
