Dirty rice
It's not quite a one pot but this easy rice recipe has most of the advantages of one. The beef and Cajun seasoning make sure it's packed with flavour and there's plenty of mixed veg in there to keep everyone healthy.
Ingredients:
- 1 tbsp vegetable oil
- 2 medium onions, finely chopped
- 500g/1lb 2oz beef mince
- 2 tbsp cajun seasoning
- 1 beef stock cube
- 450g/1lb rice of your choice (we used long grain)
- 400g/14oz frozen mixed vegetables
- 6 spring onions, sliced
- salt and black pepper
Directions:
- Heat the oil in a large deep frying pan or a large saucepan over a medium-high heat and fry the onion and mince together until lightly browned, stirring regularly to break up the mince as it cooks.
- Sprinkle over the Cajun seasoning and stir through the mince and onions. Crumble over the stock cube and add 200ml/7fl oz water. Bring to a gentle simmer, cover the pan with a lid and cook 15 minutes, stirring occasionally and adding a little extra water if needed.
- While the mince is simmering, cook the rice in a large saucepan of boiling water for 10–12 minutes, or according to the pack instructions, until tender.
- Add the frozen vegetables to the mince mixture and stir through. Cook for a further 5 minutes, or until hot throughout, stirring occasionally.
- Drain the cooked rice and return to the pan. Add the mince, vegetables and spring onions and toss together well. Season to taste with salt and pepper and serve.

Prawn
This recipe was inspired by my Aunt who had a similar salad during one of her stays in Hawaii. She likes to have bread slices with it to soak up the delicious sauce that is made by juicy papaya and the dressing on the shrimp. I like this recipe because it is such a beautiful contrast of salty with sweet and not only that, it is a nice healthy salad that is quite filling and therefore perfect for a quick lunch. By adding the papaya seeds, not only do you get a nice peppery flavour, you are reaping their nutritional benefits. Papaya seeds have are known to have compounds that kill parasites as well as containing antioxidants. They also have an antibacterial and anit-inflammatory effect on our digestive systems. I like to freeze the seeds and keep them for other salad dressings and uses.
Salmon
This spicy fish recipe is perfect for a dinner party. Serve with a crisp green salad and a cold Indian beer.
