Honey Lemon Schnitzel
These pork cutlets are coated in a sweet sauce with honey, lemon juice and butter. They're certainly good enough for company, but perfect for a quick weeknight meal, too.
Ingredients:
- 3 tablespoons all-purpose flour
- 3/4 teaspoon salt
- 3/4 teaspoon pepper
- 4 pork sirloin cutlets (4 ounces each)
- 2 tablespoons butter
- 1/4 cup lemon juice
- 1/4 cup honey
Directions:
- Mix flour, salt and pepper; sprinkle over both sides of cutlets. In a large cast-iron or other heavy skillet, heat butter over medium heat. Add pork; cook until a thermometer reads 145°, 2-3 minutes per side. Remove from pan.
- Add lemon juice and honey to skillet; cook and stir over medium heat until thickened, about 3 minutes. Add pork; heat through.
