Italian Sausage Dip
A creamy, cheesy dip made with Italian sausage, tomatoes, and seasonings. Slow-cooked into a bubbling, irresistible party favorite—serve with crackers or toasted bread.
Ingredients:
- 1 pound ground italian sausage
- 2 tomatoes, chopped
- 2 chopped green bell peppers 2 onions, chopped
- 2 (4 ounce) cans chopped green chile peppers
- 1 (16 ounce) container sour cream
- 1 (8 ounce) package cream cheese
Directions:
- Place Italian sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
- In a large bowl, mix together sausage, tomatoes, green bell peppers, onions, green chile peppers, sour cream and cream cheese.
- Transfer mixture to a slow cooker. Cook on high heat approximately 1 hour, or until vegetables are soft. Reduce heat and simmer until serving.

Prep all four servings of this easy recipe at once for ready-to-eat dinners or packable lunches for the rest of the week. If you don't like a lot of heat, try using mild chili powder, and leave out the jalapeño from the rice.
Chicken
This recipe has at it’s core, an adaptation of Jacques Pepin’s recipe for Poached Chicken (“Cooking at Home with Julia Child”), but whereas Jacques serves his chicken and veggies over a bed of rice, I have used his dish as a launching point for this “Chicken Pot Pie Provencal”. In addition to the customary peas and carrots, this version includes fennel, fingerling potatoes, haricot verts, oven roasted tomatoes, sauteed mushrooms with mustard seeds, and a mustard velouté enhanced with fresh tarragon and thyme.
