Salmon
Leah Itsines' Mix-a-Mato Tomato Salsa on Salmon
On the table in just 20 minutes, make this fresh and easy family dinner on repeat.
Ingredients:
- 1 middle piece of salmon, skin off
- a pinch of salt and pepper *to taste
- a splash of olive oil
- cooked rice *to serve
- 1 cup mix-a-mato tomatoes, quartered
- 1 spring onion stalk, finely sliced
- 1 tbs fresh coriander, roughly chopped
- 1 small garlic clove, sliced
- 1/2 tbs olive oil
- 1 tbs lemon juice
- a pinch of salt
Directions:
- Coat salmon in a pinch of salt and pepper. Heall a small non-stick pan with a splash of olive oil over medium-high heat. Cook salmon on both sides for 3 - 4 minutes or until cooked to your liking.
- Meanwhile, make the salsa. Add fresh tomatoes, spring onions, coriander, garlic, olive oil, lemon juice and a pinch of salt and mix well. Taste and season accordingly.
