MinuteВ Rice Porcupine Meatballs

Quick meatballs made with rice in the mix, cooked in tomato sauce. Easy, fun, and kid-approved.

Ingredients:

  • 1 tablespoon butter or margarine 1 small onion, chopped
  • 1 pound lean ground beef* 1 cup minuteВ® white rice, uncooked
  • 1 egg, lightly beaten
  • 1 (1.25 ounce) packet meatloaf seasoning
  • 1/4 cup water
  • 1 (15.5 ounce) jar spaghetti sauce

Directions:

  1. Melt butter in small skillet over medium high heat. Add onions; cook and stir until tender.
  2. Place onions, meat, rice, egg and seasoning in large bowl. Add water; mix until well blended. Shape into medium-sized meatballs.
  3. Pour spaghetti sauce into skillet. Bring to boil; add meatballs. Return to boil. Reduce heat to low; cover. Simmer 15 minutes or until meatballs are cooked through.
