Oatmeal Banana Cupcakes
Wholesome, hearty cupcakes made with oats and banana. Lightly sweet, ideal for breakfast or a guilt-free snack.
Ingredients:
- 1/2 cup butter or margarine, softened
- 1/2 cup sugar 2 eggs
- 1 cup mashed ripe bananas 3/4 cup honey
- 1 1/2 cups all-purpose flour 1 cup quick-cooking oats
- 1 teaspoon baking powder 1 teaspoon baking soda 3/4 teaspoon salt
Directions:
- In a mixing bowl, cream butter and sugar. Add eggs, bananas and honey; mix well. Combine dry ingredients; stir into creamed mixture just until moistened. Fill paper-lined muffin cups two-thirds full.
- Bake at 350 degrees F for 18-20 minutes or until cupcakes test done. Cool in pan 10 minutes before removing to a wire rack.
