Peanut Butter Yogurt Cup with Magic Shell Topping
This easy, high-protein snack tastes just like a Reese’s peanut butter cup. You can conveniently make it in the yogurt container for quick cleanup. Alternatively, if you don’t have a single-serve container, scoop 1/2 cup yogurt from a larger container into a small bowl. Any nut or seed butter would work well in this four-ingredient recipe.
Ingredients:
- 1 (5.3-oz.) container low-fat vanilla strained (greek-style) yogurt
- 2 teaspoons natural peanut butter
- 1 tablespoon dark chocolate chips
- 1/2 teaspoon coconut oil
- chopped unsalted peanuts for garnish (optional)
- flaky sea salt for garnish (optional)
Directions:
- Mix yogurt and peanut butter together in the yogurt container or a small bowl.
- Combine chocolate chips and coconut oil in a small microwave-safe bowl. Microwave on High in 15-second intervals, stirring after each, until the chocolate is melted and smooth (about 45 to 60 seconds total). Pour over the yogurt mixture and spread evenly to cover. Garnish with peanuts and/or salt, if desired. Freeze for 10 minutes or refrigerate for 30 minutes, until the chocolate is set.
