Pie Maker Potato Nests with Smoked Salmon

Make these mini potato hash bites in a pie maker, top with some Crème fraiche and finish with smoked salmon for finger food that can be whipped up in a flash.

Ingredients:

  • 750g sebago potatoes
  • 1 small brown onion coarsely grated
  • 30g butter melted
  • salt and pepper
  • 25g (1/3 cup) finely grated parmesan cheese
  • thin slices smoked salmon to serve
  • crème fraiche or sour cream to serve
  • fresh chives to serve

Directions:

  1. Peel and coarsely grate the potatoes. Place in a sieve and press down firmly with a large spoon to remove excess water. Transfer the potato to a bowl. Stir in the onion and butter and season well with salt and pepper.
  2. Turn on the pie maker. Press the potato mixture into the base and up the sides of the holes of the pie maker. Sprinkle each with about 2 teaspoons of the cheese. Close and cook for 8-10 minutes. Repeat with the remaining potato mixture and cheese.
  3. Fill the nests with crème fraiche and smoked salmon. Sprinkle with chives.
