Salmon and avocado chopped salad

This super salmon salad is perfect to whip up when you're running short on time.

Ingredients:

  • 1 tassal salmon skin off
  • 1 cup cos lettuce leaves shredded
  • 1 cup kale chopped
  • 7 cherry tomatoes halved
  • 1/2 cup chickpeas
  • 1/4 cup avocado diced
  • 5 pecans roughly chopped
  • 1 pinch salt and pepper *to season
  • 1 tbs olive oil
  • 1 tbs white wine vinegar
  • 1/2 lemon juiced

Directions:

  1. Heat 1tsp olive oil in a frypan and cook the salmon fillet, 4-5 minutes each side.
  2. Once the salmon is cooked, flake the salmon fillet into a bowl with a fork and set aside.
  3. Dressing: Mix the oil, vinegar and lemon in a bowl.
  4. Mix the lettuce, kale, cherry tomatoes, chickpeas, avocado and pecans in a bowl, add the flaked salmon and dressing mix, then season with salt and pepper and serve.
