Salmon
Salmon and avocado chopped salad
This super salmon salad is perfect to whip up when you're running short on time.
Ingredients:
- 1 tassal salmon skin off
- 1 cup cos lettuce leaves shredded
- 1 cup kale chopped
- 7 cherry tomatoes halved
- 1/2 cup chickpeas
- 1/4 cup avocado diced
- 5 pecans roughly chopped
- 1 pinch salt and pepper *to season
- 1 tbs olive oil
- 1 tbs white wine vinegar
- 1/2 lemon juiced
Directions:
- Heat 1tsp olive oil in a frypan and cook the salmon fillet, 4-5 minutes each side.
- Once the salmon is cooked, flake the salmon fillet into a bowl with a fork and set aside.
- Dressing: Mix the oil, vinegar and lemon in a bowl.
- Mix the lettuce, kale, cherry tomatoes, chickpeas, avocado and pecans in a bowl, add the flaked salmon and dressing mix, then season with salt and pepper and serve.
