Salted Peanut Butter Pretzel Energy Balls
Finding a snack that satisfies your craving for something sweet and salty while providing the best fuel for your body and brain isn't always easy. But luckily, these energy bites check every box! They're simple to make: double the batch and freeze some to have an energizing snack at the ready. Feel free to swap in other nuts and nut or seed butters.
Ingredients:
- 1 cup rolled oats
- 1 cup salted pretzels, crushed
- ¼ cup finely chopped peanuts
- ¼ cup mini chocolate chips
- 1 tablespoon chia seeds
- ¼ teaspoon kosher salt
- ¾ cup natural peanut butter, at room temperature
- ⅓ cup pure maple syrup, at room temperature
- 1 teaspoon vanilla extract
Directions:
- Combine oats, pretzels, peanuts, chocolate chips, chia seeds and salt in a large bowl. Stir peanut butter, maple syrup and vanilla together in a medium bowl. Add the wet ingredients to the dry ingredients; stir until well combined.
- Using 1 tablespoon for each, shape the mixture into 32 balls. Store in an airtight container in the refrigerator for up to 5 days or in the freezer for up to 3 months.
