Sauteed Enoki Mushrooms
The simplicity of this recipe makes it a great snack or light lunch, but can also serve as an appetizer or side dish to a larger meal.
Ingredients:
- 1 bunch enoki mushrooms, trimmed
- 1 tablespoon sesame oil
- 1 garlic clove, finely chopped
- 1 tablespoon low-sodium soy sauce
Directions:
- In a wok or medium skillet over medium-high heat, warm the oil. Add the garlic and cook, stirring frequently, for 1 to 2 minutes, until slightly golden.
- Add the mushrooms and toss to coat. Cook, stirring, for 2 to 3 minutes, until slightly wilted.
- Add the soy sauce and cook, stirring, for about 1 minute more, until warmed through.
