Sauteed Zucchini & Onions with Chive Butter
Switch up the chives for whatever's growing in your garden--basil or dill would also be delicious in the compound butter that tops this simple sautéed zucchini recipe.
Ingredients:
- 1 tablespoon extra-virgin olive oil
- 1 pound zucchini, cut into half-moons
- 1 small red onion, cut into 1/2-inch pieces
- ½ teaspoon salt
- ¼ teaspoon ground pepper
- 2 tablespoons unsalted butter, at room temperature
- 1 tablespoon minced fresh chives
- 1 tablespoon lemon juice
Directions:
- Heat oil in a large skillet over medium-high heat. Add zucchini, onion, salt and pepper. Cook, stirring occasionally, until tender, 4 to 6 minutes.
- Meanwhile, mash butter with chives in a small bowl until combined.
- Remove pan from heat and stir in lemon juice. Top the vegetables with the chive butter before serving.
